An individual shortcrust pastry pie filled with a selection of game – venison, pheasant and mallard, cooked with shallots in a red wine stock sauce served with a quenelle of colcannon and surrounded with a wild mushroom stock sauce

Loin of Cod in a Lobster Bisque Sauce

Filleted loin of cod pan fried with Derbyshire lemon infused rapeseed oil and fresh thyme, served on finely cut pan fried leeks surrounded with a creamy lobster bisque sauce

Roast Leg & Fillet of Lamb

Roast leg of lamb oven roasted pink, carved onto caramelised braised red cabbage, topped with fillet of lamb wrapped with sage leaves and pancetta, finished with a red currant wine stock reduction

Served with dauphinoise potatoes with fresh herbs

Home made light & cream quenelles of white & dark Belgiun chocolate mousse, served in a brandy snap basket on swirls of caramel & vanilla sauce, dressed with spun chocolate
