Rabbit, Celery & Stilton Soup
A celery & stilton soup with pan fried crispy wild shot rabbit and bacon, finished with stilton crisps

Duck Liver Parfait & Sliced Teal
Smooth duck liver parfait with a hint of sherry, accompanied with a tossed leaf salad with pan fried strips of teal breast, served with melba toast and home made windfall apple and wild rosehip chutney

Partridge Pie & Nut Pastries
A pot of partridge breast in a creamy mushroom and tarragon sauce, oven baked with a shortcrust pastry top, finished with nut and cheddar cheese pastries

Wood Pigeon with Oyster Mushrooms and Pasta
Wood pigeon pan fried with thyme and wrapped in pancetta, carved onto oyster mushrooms, sautéed with shallots, a splash of brandy and finished with stock and a little cream, bound with spaghetti & topped with the sliced wood pigeon

Home Smoked Pheasant on Braised Leg
Pheasant leg pot roasted with lentils, pearl barley, balotti beans and stock, finished with carved, smoked pheasant breast and herbs

Main Course

Saddle of Venison
Loin of venison, wrapped with sage leaf, and cured ham, carved onto black pudding with sweet potato puree, simply finished with a redcurrant reduced stock sauce

Dessert

Refreshing limoncello crème brulle with a crispy toffee topping, served with almond biscuit
