Starter
Winter Broth Soup with Dumplings
A clear broth soup with lentils, split peas, barley & noodles, finished with herb dumplings
and served with cheddar cheese straws
Home Smoked Pheasant Pasta Carbonara
Home smoked pheasant breast, pan fried with cured bacon, shallots, tarragon and wild mushrooms, finished with linguini, white wine, cream and a dusting of parmesan cheese & fresh parsley
Mussels in a Creamy Wine Sauce
Mussels cooked with a hint of garlic, shallots and white wine & cream, finished with fresh herbs
and toasted cheese rarebit
Terrine of Rabbit
Home made terrine of rabbit with a caramelised pear and fig chutney, finished on a wholegrain mustard sauce, melba toast and a salad timbale of celery, walnut & apple
Main Course
Rack of Lamb with Braised Shoulder of Lamb
Two bone rack of lamb roasted pink and carved over sliced slow braised shoulder of lamb with rosemary, finished with a rich mustard and shallot wine sauce
Fillet of Seabream with Scallop and Prawns
Fillet of seabream pan fried in lemon rapeseed oil & dill, finished on sautéed scallop, king prawn and curly kale, surrounded with a creamy saffron lentil sauce
Trio of Pork
Fillet of pork wrapped with thyme and pancetta, pulled shoulder of pork and crispy belly pork on roasted sweet potato and a drizzle of mushroom and mustard cream wine sauce
Filled & Wrapped Field Mushroom (V)
A field mushroom filled with a mixed bean and kale filling topped with a stilton crumble, wrapped around with filo pastry, oven baked and finished on a mushroom and mustard creamy white wine sauce
All the above main courses are served with a selection of seasonal vegetables & a potato dish

Chocolate & Nut Baked Torte
A home made dark chocolate torte with pistachio & walnuts, finished with baked & glazed winter fruits in a sweet wine glaze with spices
Apple & Ginger Crumble Tart
Stewed apple with ginger in a shortcrust tartlet topped with crispy sugared crumble, finished on a swirl of vanilla sauce and rich dark toffee sauce, topped with spun sugar
Butler’s Winter Cheeseboard
Assorted cheeses served with home made date chutney, grapes, celery & spiced jelly,
served with savoury biscuits & croutes
