Butler’s BBQ Menu Selection

– cooked on a traditional charcoal BBQ!

Our BBQ menus are available April to October (in case of poor weather, we have our own catering marquee available)

BBQ Menu 1

In-house marinated chicken breast, with our own home made infusion, choose one from the selection below-

Buffalo Marinade – more of a glaze, punchy with a sweetness of honey, lime, smoked paprika & chili with seasoning
Cuban Mojo Marinade – a refreshing taste of orange juice & zest, lime, mint, oregano, a little garlic, cumin, cracked salt & black peppercorn
Aloha Marinade – tropical & zesty, pineapple juice, ginger, a little garlic, brown sugar & soya sauce, finished with pan fried, chopped onion and fresh pineapple scattered on top
Traditional BBQ – sweet & a little spicy with tomato puree, Worcester sauce, a little chilli & ‘Dr Pepper’ sweet liquor

-Long pork sausage brushed with a sticky sauce glaze
-Beef minute steak with a ‘2 day’ marinated rub of cracked pepper, sea salt, brown sugar, paprika, cumin & a little fiery cayenne pepper, rubbed with olive oil
-Foil wrapped half jacket potato, scooped and mixed with grated mozzarella cheese, mixed peppers & caramelised red onion chutney
-Tossed leaf salad with tomato, cucumber, radish & a dusting of Parmesan cheese, served with a balsamic, mustard seed dressing
-Sliced baguettes with ciabatta breads & butter
-Selection of sauces

BBQ Menu 2

Choose from the marinated chicken above

-Beef joint with a ‘2 day’ marinated rub of cracked pepper, sea salt, sugar, honey, smoked paprika, cumin, a little garlic & ginger home smoked and finished on the BBQ, carved by the chefs & served with a home made BBQ sauce
-Two stage pork steak – the pork steak is rested in brine for 24hrs, then marinaded with a rub of brown sugar, sea salt, black pepper, cayenne pepper, garlic & celery salt, finished on the BBQ
-King prawn skewer – rubbed with sea salt, pepper and a little cayenne & garlic powder, brushed with a lemon, lime, honey & dill glaze
-Potato salad with red onion, chives & chopped chorizo with light mayonnaise & creme fraiche
-Coleslaw with fine cut white and red cabbage, in a lemon mayonnaise with cracked pepper
-Sliced baguettes with ciabatta breads & butter
-Selection of sauces

-Home made beef patty with red onion, Worcester sauce & soy sauce, paprika, cumin & thyme BBQ’d and served with a tomato relish
-Leg of lamb joint rubbed with seasoning, fresh rosemary & lemon zest, home smoked and finished on the BBQ – carved by the chef and drizzled with a home made reduced plum & Bourbon whisky sauce
-Foil wrapped baked fillet of salmon with a sweet & chilli glaze of cracked peppers, sea salt, mustard & chilli seeds, dill and honey, served with lemon wedges dipped in smoked paprika
-Tomato, basil & feta cheese salad with red onion drizzled with balsamic & olive oil, cracked pepper & sea salt
-Pasta salad with roasted vegetables, fresh herbs & rocket leaves in a tomato pesto sauce
-Open cut baguettes & ciabatta bread brushed with oil and herbs & grilled

1) Portobello mushroom cup filled with red onion, cracked sea salt & pepper, asparagus and Parmesan cheese with smoked paprika, wrapped in foil with a little chilli & olive oil
2) Foil wrapped half pepper filled with goats cheese in a caramelised red onion chutney with fresh basil & cracked pepper
3) Skewered halloumi and cherry tomatoes brushed with green pesto
Skewered roasted vegetables with cumin, paprika, oregano, lemon & thyme, with a creme fraiche & chive dressing
4) Home made vegetable patty served on a toasted ciabatta topped with a tomato relish
5) Aubergine slice wrapped around tomato & mozzarella, brushed with olive oil and chopped herbs, drizzled with red pesto
6) Foil wrapped half avocado filled with half boiled egg, grated smoked cheese, onions & peppers in a tomato sauce

We can also provide more traditional BBQ menus with home made burgers & quality sausages in rolls if required.
