Fillet of brill pan fried with smoked pancetta and wild rice, finished with sautéed cockles flashed with Prosecco, Cornish brie & a touch of mustard and cream

Mussels in the shell cooked with shallots, white wine and cream, finished with fine cut sweet potato, leeks and strips of home smoked fillets of mackerel, served with crab rarebit croutes

Fillet of sea trout cured with salt and dill, simply pan fried in rapeseed oil & butter, finished on sautéed crispy scallops, folded into a hollandaise sauce with fresh wilted sorrel
