Fillet of home smoked trout, served on sautéed kale and oyster mushrooms, finished with a saffron, lentil cream stock sauce
Home made Layered Vegetable Parfait (V)
Smooth layered vegetable terrine with asparagus served with a melba toast stack, home made red onion & port chutney and finished with a tossed leaf saladette with walnuts, pear & Derbyshire stilton

Saddle of Venison
Saddle of roe venison wrapped with thyme and pancetta, oven roasted pink and carved onto a rosti potato with a swirl of sweet potato puree and surrounded with a redcurrant and port reduced stock sauce
Sea bass and Scallops
Fillet of sea bass pan fried with dill and Derbyshire lemon rapeseed oil, finished on sautéed scallops and leeks, surrounded with a rich thermidor sauce
Filled Aubergine (V)
Aubergine filled with a stuffing of walnuts, cranberries & herbs, topped with stilton, oven baked and finished on sautéed oyster mushrooms and a lentil stock sauce
